FAQs

What does Noci mean?
Noci (no-tchi) is the Italian word for nuts. We’re a bit nutty, so it made sense to us!

What’s the difference between gelato and ice cream?
Fat content and air content:

» Noci gelato contains far less fat and is denser than conventional ice cream.

» Noci gelato is between 4 and 7 percent fat; ice cream is between 12 and 24 percent fat, or more.

» Noci gelato has about 20 percent air; ice cream traditionally is 50 percent air, at minimum.

» All Noci sorbetti are naturally fat-free except our Chocolate, which is made with cocoa that contains a small amount of fat.

What is sorbetto?
Sorbetto is like gelato but is made with fresh fruit and no dairy products. Sorbetto is the Italian word for sorbet (which is a French word). Because sorbetto is dairy-free, both vegans and the lactose-intolerant can enjoy a cup or cone of our sorbetto. The fruit we use to make Noci sorbetto is as local as possible. We will never use processed purees or concentrates, and we wouldn’t even think of using frozen or canned fruit or juices.

What is the difference between sorbetto and sherbet?
Sherbet contains dairy—up to 2 percent milk fat.
